Sleep - catch up on your beauty sleep like this lady above captured by our candid camera. After all you've been deprived of it. Other than the chairs at the airport, there're some lounging chairs - unfortunately only inside the restricted area (before passing through the HK immigrations into Hong Kong).
Watch 3D Show - right at terminal 2, you can catch a 3D show.
Shop - there're some shops at the airport, but since prices at the airport may not be most competitive, you can also take the Airport Express train to Tsing Yi (just a 15-minute ride) and shop at the Maritime Square mall right at the Airport Express & MTR interchange station. If that's not enough, do some mall hopping - the following shopping malls are all connected to the MTR (no umbrella required even if it's pouring down rain):
